These chocolate peanut butter truffles are so easy to make and you can make them in batches well in advance of Christmas and will impress all of your friends and family. I always make these at Christmas and I give them to my friends as another present to go with their main gift, but these would work well for the people you work with or to give to your friends. I make these for my Mum's work friends all the time and they always love them and I want to share this recipe with you as well. I always make roughly 20 from this batch but I make larger truffles so you could actually make more. I always have 10 truffles covered in milk chocolate and then 10 covered in dark chocolate but obviously you can choose whatever chocolate you prefer!

You will need ...
150g Smooth Peanut Butter
40g Unsalted Butter
100g Icing Sugar
1 tsp Salt
100g Milk Chocolate
100g Dark Chocolate
30g Salted Peanuts (chopped into small pieces)
Put the peanut butter and butter into a microwaveable bowl and heat for 30 second intervals until the butter has melted and the peanut butter is soft. The mix together and sieve in the icing sugar (but only a bit at a time) and stir in. Then add 1 tsp of salt to the mixture and stir until it becomes a paste.
Take a teaspoon of the mixture and roll into balls and place on a parchment-lined baking sheet and then repeat until you have used all the mixture. Then chill in the fridge for approximately 15 minutes.
Melt 100g of milk chocolate in one bowl and then melt 100g of dark chocolate in another bowl (if you only want to use one type of chocolate then just melt 200g of either milk or dark chocolate) and once melted set to the side to cool down slightly. After 15 minutes take you truffles out of the fridge and then with a fork place each ball into one bowl of chocolate and place back on the parchment-lined baking sheet.
Roughly chop the salted peanuts into small pieces and then sprinkle some of the chopped peanuts over each truffle. Once you have done this with every truffle place back in the fridge for 15 minutes until the chocolate has set.
Make sure that each truffle has set before serving. To make them into gifts place 5 or 6 truffles into cellophane bags and tie with a pretty piece of ribbon and add a Christmas Tag so you know you are giving them to.
